  • 4 Eggs
  • 1 cup Sautéed mushrooms (Cremini or Button)
  • 1/2 cup Cheddar cheese (shredded)
  • 1 Avocado (sliced)
  • 1/4 cup Fresh herbs (Cilantro or Parsley)
  • Salt (to taste)
  • Pepper (to taste)
  • Oil or butter (for cooking)
  • Optional: Paprika or chili powder (for seasoning)
  • Optional: Spicy salsa (for serving)

Instructions

  1. Prep your ingredients by finely chopping the mushrooms and herbs.
  2. Heat a skillet over medium heat and add oil or butter. Sauté the mushrooms until golden brown.
  3. Whisk the eggs with salt and pepper in a bowl. Pour into the skillet and stir gently, cooking until just set.
  4. Warm tortillas in another pan for about 30 seconds on each side.
  5. Assemble tacos by layering the egg and mushroom mixture, topping with cheese, avocado, and herbs.
  6. Serve immediately and enjoy!

Notes

For fluffy eggs, remove them from heat just before fully cooked as they will continue to cook. Customize fillings to suit your taste.
