- 4 Flour tortillas
- 4 Eggs
- 1 cup Sautéed mushrooms (Cremini or Button)
- 1/2 cup Cheddar cheese (shredded)
- 1 Avocado (sliced)
- 1/4 cup Fresh herbs (Cilantro or Parsley)
- Salt (to taste)
- Pepper (to taste)
- Oil or butter (for cooking)
- Optional: Paprika or chili powder (for seasoning)
- Optional: Spicy salsa (for serving)
Instructions
- Prep your ingredients by finely chopping the mushrooms and herbs.
- Heat a skillet over medium heat and add oil or butter. Sauté the mushrooms until golden brown.
- Whisk the eggs with salt and pepper in a bowl. Pour into the skillet and stir gently, cooking until just set.
- Warm tortillas in another pan for about 30 seconds on each side.
- Assemble tacos by layering the egg and mushroom mixture, topping with cheese, avocado, and herbs.
- Serve immediately and enjoy!
Notes
For fluffy eggs, remove them from heat just before fully cooked as they will continue to cook. Customize fillings to suit your taste.
