- 2 cups all-purpose flour
- 1 teaspoon baking powder

- 2 large eggs
- 1/2 cup unsalted butter, softened
- 4 oz cream cheese, softened (for filling)
- 1 cup powdered sugar (for filling)
- 1 teaspoon vanilla extract (for filling)
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then incorporate apple cider.
- In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Drop rounded scoops of batter onto prepared sheets and bake for 10-12 minutes.
- For the filling, beat cream cheese and butter until smooth, add powdered sugar and vanilla extract.
- Once cookies are cooled, spread cream cheese filling on half and top with another cookie.
- Optionally, roll the edges in crushed nuts or cinnamon sugar before serving.
