  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened (for filling)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then incorporate apple cider.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  6. Drop rounded scoops of batter onto prepared sheets and bake for 10-12 minutes.
  7. For the filling, beat cream cheese and butter until smooth, add powdered sugar and vanilla extract.
  8. Once cookies are cooled, spread cream cheese filling on half and top with another cookie.
