- 4 cloves garlic (minced)
- 1 tablespoon fresh thyme (chopped)
- 1 can (14 oz) coconut milk
- 1 bell pepper (chopped)
- 2 carrots (sliced)
- 1 cup chicken broth
- Salt and pepper to taste
- Oil for sautéing
Instructions
- Marinate the chicken: Combine chicken with curry powder, diced garlic, and a sprinkle of salt in a bowl. Let marinate for at least 30 minutes.
- Sauté the aromatics: In a large skillet, sauté onions in oil until translucent. Add garlic and scotch bonnet; cook for another 1-2 minutes.
- Brown the chicken: Add marinated chicken to the skillet and brown for 5-7 minutes.
- Add the rest: Stir in bell peppers, carrots, coconut milk, and chicken broth. Add thyme and season with salt and pepper. Simmer.
- Simmer: Cover and let simmer for 20-25 minutes.
