  • 1 tablespoon fresh thyme (chopped)
  • 1 can (14 oz) coconut milk
  • 1 bell pepper (chopped)
  • 2 carrots (sliced)
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Oil for sautéing

Instructions

  1. Marinate the chicken: Combine chicken with curry powder, diced garlic, and a sprinkle of salt in a bowl. Let marinate for at least 30 minutes.
