- 2 lbs Chicken thighs or drumsticks (bone-in)
- 2 tablespoons Curry powder
- 4 cloves Garlic (minced)
- 1 large Onion (diced)
- 2 sprigs Fresh thyme (or 1 teaspoon dried thyme)
- 1 Scotch bonnet pepper (diced, adjust to taste)
- 2 tablespoons Vegetable oil
- 1 can (14 oz) Coconut milk or 2 cups Chicken broth
- 2 Bell peppers (sliced, any color)
Instructions
- Prepare the chicken: Rinse and pat dry, then season with salt and pepper.
- Sauté the aromatics: Heat oil over medium heat, add onions until translucent, then garlic and thyme; stir until fragrant.
- Add the spices: Stir in curry powder and scotch bonnet pepper for about a minute.
- Cook the chicken: Add chicken pieces, brown on all sides.
- Build the sauce: Pour in coconut milk or broth, deglaze the skillet.
- Simmer: Reduce heat to low, cover, and simmer for 30-40 minutes until chicken is tender.
- Add bell peppers: In last 10 minutes of cooking, stir in sliced bell peppers.
- Taste and adjust: Check seasoning and adjust as necessary.
- Serve: Spoon curry over rice or with roti, garnish with scallions or thyme.
Notes
For added depth of flavor, marinate chicken in spices for a few hours or overnight. Adjust heat by varying the amount of scotch bonnet pepper used.
