Ingredients

  • 6 slices thick-cut bacon
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • Fresh parsley or chives, for garnish
  • Salt and pepper to taste

Instructions

  1. In a large skillet, over medium heat, cook the chopped bacon until crispy, about 6-8 minutes. Remove and drain on paper towels, leaving some drippings in the pan.
  2. In the same skillet, sauté the chopped onions and garlic in the bacon drippings until the onion is translucent, about 3-5 minutes.
  3. Add ground beef, breaking it apart. Season with salt and pepper and cook until browned, about 7-10 minutes.
  4. Stir in the long-grain rice and beef broth. Bring to a simmer, cover, and cook for 18-20 minutes until rice is tender.
  5. Fold in the cooked bacon and shredded cheddar until melted and well combined.
  6. Garnish with fresh herbs before serving.
