- 1 lb ground beef
- 6 slices thick-cut bacon
- 1 cup long-grain rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup shredded cheddar cheese
- Fresh parsley or chives, for garnish
- Salt and pepper to taste
Instructions
- In a large skillet, over medium heat, cook the chopped bacon until crispy, about 6-8 minutes. Remove and drain on paper towels, leaving some drippings in the pan.
- In the same skillet, sauté the chopped onions and garlic in the bacon drippings until the onion is translucent, about 3-5 minutes.
- Add ground beef, breaking it apart. Season with salt and pepper and cook until browned, about 7-10 minutes.
- Stir in the long-grain rice and beef broth. Bring to a simmer, cover, and cook for 18-20 minutes until rice is tender.
- Fold in the cooked bacon and shredded cheddar until melted and well combined.
- Garnish with fresh herbs before serving.
