Ingredients

  • 1 cup bell peppers (mixed colors)
  • 8 oz penne or rotini pasta
  • 1 cup fresh mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp Italian herbs (oregano or thyme)
  • 1 cup beef broth

Instructions

  1. Boil a pot of salted water and cook pasta according to package instructions. Drain and set aside, reserving some pasta water.
  2. In a large skillet over medium heat, warm olive oil. Add ground beef, season with salt and pepper. Cook until browned, about 5-7 minutes.
  3. Add sliced mushrooms and bell peppers; sauté until softened, about 5 minutes.
  4. Incorporate minced garlic and cook until fragrant, about 1 minute.
  5. Pour in beef broth, scraping browned bits from the pan for extra flavor.
  6. Toss in the cooked pasta and mix thoroughly. Adjust with reserved pasta water for desired consistency.
  7. Serve warm, garnished with fresh herbs if desired.

Notes

Customize with your favorite vegetables or spices. Adding red pepper flakes can give it a hint of spice.
