- 1 cup bell peppers (mixed colors)
- 8 oz penne or rotini pasta
- 1 cup fresh mushrooms (sliced)
- 3 cloves garlic (minced)
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tsp Italian herbs (oregano or thyme)
- 1 cup beef broth
Instructions
- Boil a pot of salted water and cook pasta according to package instructions. Drain and set aside, reserving some pasta water.
- In a large skillet over medium heat, warm olive oil. Add ground beef, season with salt and pepper. Cook until browned, about 5-7 minutes.
- Add sliced mushrooms and bell peppers; sauté until softened, about 5 minutes.
- Incorporate minced garlic and cook until fragrant, about 1 minute.
- Pour in beef broth, scraping browned bits from the pan for extra flavor.
- Toss in the cooked pasta and mix thoroughly. Adjust with reserved pasta water for desired consistency.
- Serve warm, garnished with fresh herbs if desired.
Notes
Customize with your favorite vegetables or spices. Adding red pepper flakes can give it a hint of spice.
