Instructions
- Prepare the Tenderloin: Trim silver skin from the tenderloin and pat it dry.
- Season Generously: Season with salt and pepper, then let it sit at room temperature for 30-60 minutes.
- Sear the Beef: Heat a skillet over medium-high heat, add oil/butter, and sear the tenderloin for 2-3 minutes on each side.
- Add Aromatics: Toss in garlic and fresh herbs while searing.
- Roast in the Oven: Transfer to a preheated oven at 400°F (200°C) and roast until the internal temperature reaches 125°F (52°C) for medium-rare, about 20-30 minutes.
- Rest the Meat: Let it rest for 10-15 minutes.
- Slice and Serve: Slice against the grain and serve with desired sides.
