- 1 whole Beef Tenderloin, trimmed
- 2 tablespoons Olive oil
- Fresh herbs (Rosemary, Thyme, or Parsley)
- 3 cloves Garlic, minced
- Salt, to taste
- Black pepper, to taste
- Optional: 2 tablespoons Butter, for basting
Instructions
- Preheat your oven to 425°F (220°C) and let the tenderloin sit at room temperature for 30 minutes.
- Season the Beef Tenderloin with salt and pepper, then make a paste with crushed garlic and herbs mixed with olive oil. Rub it all over the meat.
- Heat a skillet over medium-high heat, add olive oil, and sear the tenderloin for 2-3 minutes on each side until golden brown.
- Transfer the tenderloin to the oven and roast for 20-30 minutes or until a meat thermometer reads 125°F (52°C) for medium-rare.
- Add butter to the skillet during the last few minutes of cooking to baste the meat for added richness.
- Once cooked to desired doneness, let the beef rest under foil for 15 minutes, then slice against the grain and serve.
Notes
Be sure to monitor the internal temperature closely to avoid overcooking. Resting the meat helps retain its juices.
