Description

A delightful fusion of sweet blueberries and rich jam in a soft, buttery cookie.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 to 2 cups fresh blueberries
  • Jam of your choice (about 1 teaspoon per cookie)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  4. Cream the softened butter and granulated sugar together until light and fluffy.
  5. Beat in the eggs one at a time, ensuring each is fully incorporated.
  6. Gradually mix the dry ingredients into the wet mixture until just combined.
  7. Gently fold in the blueberries.
  8. Scoop dough onto the prepared baking sheet and create a small well in each cookie.
  9. Spoon about a teaspoon of jam into each well.
  10. Bake for 12-15 minutes, or until the edges are lightly golden. Let cool before transferring to a wire rack.

Notes

For best results, chill dough for 30 minutes before baking. Be careful not to overmix the dough.
