Ingredients

  • 4 lbs beef short ribs
  • 2 cups red wine (Cabernet Sauvignon or Merlot)
  • 2 cups beef broth
  • 1 onion, diced
  • 2 carrots, diced
  • 4 cloves garlic, crushed
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Heat a heavy skillet or Dutch oven over medium-high heat and drizzle in olive oil. Pat short ribs dry and season with salt and pepper. Sear each side for 3-4 minutes until golden brown.
  3. Remove ribs and add diced onions, carrots, and crushed garlic to the skillet. Sauté until soft, about 5-7 minutes, scraping the bottom of the pan.
  4. Pour in red wine and let simmer for 2 minutes. Add beef broth and fresh herbs, ensuring the liquid covers the ribs about halfway. Bring to a simmer.
  5. Add short ribs back to the pot, cover tightly, and transfer to the oven. Braise for about 3 hours until fork-tender.
  6. Remove from oven and let sit for 15 minutes before serving. Skim excess fat if desired.
  7. Serve warm with your favorite side dishes, such as creamy polenta or garlic mashed potatoes.
