- 4 lbs beef short ribs
- 2 cups red wine (Cabernet Sauvignon or Merlot)
- 2 cups beef broth
- 1 onion, diced
- 2 carrots, diced
- 4 cloves garlic, crushed
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Heat a heavy skillet or Dutch oven over medium-high heat and drizzle in olive oil. Pat short ribs dry and season with salt and pepper. Sear each side for 3-4 minutes until golden brown.
- Remove ribs and add diced onions, carrots, and crushed garlic to the skillet. Sauté until soft, about 5-7 minutes, scraping the bottom of the pan.
- Pour in red wine and let simmer for 2 minutes. Add beef broth and fresh herbs, ensuring the liquid covers the ribs about halfway. Bring to a simmer.
- Add short ribs back to the pot, cover tightly, and transfer to the oven. Braise for about 3 hours until fork-tender.
- Remove from oven and let sit for 15 minutes before serving. Skim excess fat if desired.
- Serve warm with your favorite side dishes, such as creamy polenta or garlic mashed potatoes.
