Crispy egg rolls filled with creamy, spicy Buffalo chicken dip, perfect for gatherings and game nights.


Ingredients

  • 2 cups shredded chicken (rotisserie or poached)
  • 8 oz cream cheese, softened
  • ½ cup Buffalo sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • ¼ cup chopped green onions
  • 10 egg roll wrappers
  • Oil for frying (vegetable or canola)

Instructions

  1. In a large bowl, combine shredded chicken, softened cream cheese, Buffalo sauce, shredded cheese, and chopped green onions. Mix until fully incorporated.
  2. Lay an egg roll wrapper on a clean surface, pointed towards you. Place a couple of tablespoons of filling near the center. Fold the bottom edge over the filling, then fold in the sides towards the center. Roll gently but tightly towards the top, sealing edges with a little water.
  3. Heat oil in a large skillet over medium heat. Once hot, fry the egg rolls in batches until golden brown and crispy, about 3–4 minutes on each side. Drain on paper towels.
  4. Serve with celery sticks and a side of ranch or blue cheese sauce for dipping.

Notes

For a lighter option, substitute Greek yogurt for cream cheese. Can freeze uncooked rolls for later frying.
