  • 1 lb boneless chicken (breast or thighs)
  • 1 can cooked black beans
  • 1 bell pepper, diced
  • 2 tbsp Cajun seasoning
  • 1/4 cup fresh cilantro, chopped
  • 4 flour or corn tortillas
  • 1 cup cheese (cheddar or pepper jack)
  • 1 lime, juiced
  • Olive oil for sautéing

Instructions

  1. Season chicken with Cajun spices and sauté in a hot skillet with olive oil for 6-8 minutes until browned and juicy.
  2. Add diced bell peppers and sauté for another 3 minutes until slightly tender.
  3. Stir in black beans until heated throughout.
  4. Lay out a tortilla, spoon the chicken and black bean mixture in the center, sprinkle with cheese, and add lime juice.
  5. Tuck in the edges and roll tightly.
  6. Return the burrito to the skillet on medium heat for 2-3 minutes on each side until crispy.
