- 1 lb boneless chicken (breast or thighs)
- 1 can cooked black beans
- 1 bell pepper, diced
- 2 tbsp Cajun seasoning
- 1/4 cup fresh cilantro, chopped
- 4 flour or corn tortillas
- 1 cup cheese (cheddar or pepper jack)
- 1 lime, juiced
- Olive oil for sautéing
Instructions
- Season chicken with Cajun spices and sauté in a hot skillet with olive oil for 6-8 minutes until browned and juicy.
- Add diced bell peppers and sauté for another 3 minutes until slightly tender.
- Stir in black beans until heated throughout.
- Lay out a tortilla, spoon the chicken and black bean mixture in the center, sprinkle with cheese, and add lime juice.
- Tuck in the edges and roll tightly.
- Return the burrito to the skillet on medium heat for 2-3 minutes on each side until crispy.
- Serve warm with sauces, salsa, or guacamole.
Notes
To avoid overstuffing, use less filling. Adjust heat while sautéing to prevent burning.
