- 1 lb shrimp (peeled and deveined)
- 1 cup Cajun seasoning (store-bought or homemade)
- 1 cup flour
- 1 cup cornmeal
- 2 eggs
- 1 cup buttermilk
- Oil for frying (vegetable or canola)
Instructions
- Prep the shrimp by peeling, deveining, rinsing, and drying them with paper towels.
- Whisk together buttermilk and a dash of Cajun seasoning in a bowl.
- In another bowl, mix equal parts flour and cornmeal with a couple of tablespoons of Cajun seasoning.
- Dip each shrimp in the buttermilk mixture, then coat with the flour mixture.
- Heat about an inch of oil in a skillet over medium-high heat.
- Fry shrimp in batches for 2-3 minutes on each side or until golden brown.
- Drain excess oil on paper towels and serve immediately with dipping sauce.
