- 1 sheet of puff pastry, thawed
- 8 oz brie cheese, cut into small pieces
- 1 cup chopped pecans
- 1/4 cup brown sugar
- 2 tablespoons butter
- 1/2 cup dried cranberries
- Fresh thyme or rosemary for garnish
- Honey for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- Melt 2 tablespoons of butter in a skillet over medium heat. Add 1 cup of chopped pecans and 1/4 cup of brown sugar, stirring frequently until coated and caramelized (about 5-7 minutes). Remove from heat and let cool.
- Cut puff pastry into squares and press each square into a muffin tin to create cups.
- Place a piece of brie inside each pastry cup. Top with dried cranberries and a sprinkle of candied pecans.
- Bake for about 15 minutes, or until the pastry is golden and the cheese is melted.
- Remove from oven, let cool slightly, then drizzle with honey and sprinkle with thyme or rosemary before serving.
Notes
These bites can be made ahead and frozen before baking. Just add a few extra minutes to the cooking time if baking from frozen.
