Ingredients

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 3 cups apples (Granny Smith or Honeycrisp), peeled and sliced
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1/4 cup caramel sauce

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and 2 tbsp sugar; press into the bottom of a springform pan. Bake for 10 minutes.
  3. In a large bowl, beat cream cheese until smooth. Gradually mix in sugar, then add eggs one at a time and vanilla extract.
  4. Toss sliced apples with cinnamon and nutmeg; spread over the crust, then pour the cheesecake batter on top.
  5. Bake for about 60-70 minutes, or until edges are set but center is slightly jiggly; let cool and refrigerate for at least 4 hours or overnight.
  6. Drizzle with caramel sauce before serving and enjoy!

Notes

To prevent cracking, place a pan of water in the oven while baking. Allow the cheesecake to cool in the oven with the door slightly ajar to minimize cracks.
