Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each, and stir in the vanilla and almond extracts.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually mix the dry ingredients into the wet ingredients until just combined.
  7. Stir in the cherry soda until fully incorporated.
  8. Scoop heaping tablespoons of cookie dough onto the lined baking sheet, spacing them apart.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
