- 8–10 large eggs
- 2 cups homemade flaky biscuits or store-bought
- 1 cup sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup fresh herbs (basil, chives, or parsley)
- 1 cup diced vegetables (onions, peppers, or mushrooms)
- Salt and pepper to taste
- 1 tablespoon olive oil for sautéing
Instructions
- Prep the Biscuits: If making from scratch, create biscuit dough and cut into bite-sized pieces. Bake until golden brown.
- Sauté Vegetables: In a large skillet over medium heat, heat olive oil and sauté diced onions until translucent. Add chopped mushrooms and cook until softened.
- Whisk the Eggs: In a bowl, whisk eggs with salt and pepper, and fold in fresh herbs.
- Combine Everything: Add sautéed vegetables and biscuit pieces to the egg mixture. Gently fold in cheese.
- Cook: Pour the mixture back into the skillet and cook on medium-low heat until edges set. Transfer to preheated oven at 350°F (175°C) for 20-25 minutes until puffed and golden.
- Serve Warm: Let rest for a few minutes before slicing into wedges.
