Ingredients

  • 12 jumbo pasta shells
  • 2 cups cooked chicken, shredded
  • 1 cup Alfredo sauce
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley or basil, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the jumbo shells in salted water until al dente, about 8-10 minutes. Drain and set aside.
  3. In a skillet, heat oil and sauté fresh garlic until fragrant. Add cooked chicken, spinach, and half of the Alfredo sauce. Stir until combined. Adjust seasoning.
  4. Spoon the chicken mixture into each shell along with a sprinkle of mozzarella.
  5. Place stuffed shells in a greased baking dish, opening side up. Pour remaining Alfredo sauce over shells and top with mozzarella and Parmesan.
  6. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is golden.
  7. Garnish with fresh herbs before serving.

Notes

For a lighter version, consider using low-fat Alfredo sauce or Greek yogurt. You can also swap chicken with sautéed mushrooms or zucchini for a vegetarian option.
