- 12 jumbo pasta shells
- 2 cups cooked chicken, shredded
- 1 cup Alfredo sauce
- 1 cup fresh spinach, chopped
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 3 cloves garlic, minced
- Salt and pepper, to taste
- Fresh parsley or basil, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Boil the jumbo shells in salted water until al dente, about 8-10 minutes. Drain and set aside.
- In a skillet, heat oil and sauté fresh garlic until fragrant. Add cooked chicken, spinach, and half of the Alfredo sauce. Stir until combined. Adjust seasoning.
- Spoon the chicken mixture into each shell along with a sprinkle of mozzarella.
- Place stuffed shells in a greased baking dish, opening side up. Pour remaining Alfredo sauce over shells and top with mozzarella and Parmesan.
- Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is golden.
- Garnish with fresh herbs before serving.
Notes
For a lighter version, consider using low-fat Alfredo sauce or Greek yogurt. You can also swap chicken with sautéed mushrooms or zucchini for a vegetarian option.
