Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons butter
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Pat the chicken thighs dry with paper towels and season generously with salt and pepper.
  2. Heat 1 tablespoon of butter in a large skillet over medium-high heat, add chicken thighs skin side down, and cook for 6-7 minutes until golden brown. Flip and cook the other side for an additional 5 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, melt the remaining tablespoon of butter and add minced garlic, sauté for 30 seconds until fragrant.
  4. Add chicken broth, scraping up any brown bits from the bottom of the pan.
  5. Lower the heat, whisk in the heavy cream, thyme, and lemon juice, simmering a few minutes until the sauce thickens slightly.
  6. Return the chicken to the skillet, cover, and simmer for about 20 minutes until fully cooked and tender.
  7. Garnish with fresh parsley and serve with mashed potatoes or crusty bread.

Notes

Let the chicken come to room temperature before cooking for even cooking. Avoid cooking with high heat to prevent burning garlic.
