- 1/2 cup granulated sugar
- 1/2 cup powdered sugar
- 1 cup almond flour
- 1 1/2 cups all-purpose flour
- 1 cup semisweet or dark chocolate chips
- 3/4 cup chopped toasted almonds
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the butter and sugars together in a large mixing bowl until light and fluffy (about 3 minutes).
- Incorporate the vanilla extract, mixing until fully integrated.
- Sift together the all-purpose flour, almond flour, and a pinch of salt; gradually add to the butter mixture, stirring until just combined.
- Fold in the chocolate chips and chopped almonds until evenly distributed.
- Scoop tablespoon-sized portions of dough, roll into balls, and place on the prepared baking sheet, spaced 2 inches apart.
- Gently press each ball slightly to flatten.
- Bake for 12-15 minutes or until edges turn golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a dairy-free option, substitute coconut oil for butter. Experiment with different nuts if desired.
