Description

  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour

  • 1 large egg
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the oats, flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat together the softened butter, brown sugar, and granulated sugar until fluffy (about 3 minutes).
  4. Add the egg and vanilla to the butter mixture and beat until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoons of cookie dough onto the prepared baking sheet, spacing them about two inches apart.
  7. Bake for 10-12 minutes, until the edges are firm but the centers look slightly underdone.
  8. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
  9. Enjoy warm or store in an airtight container!

Notes

For a dairy-free option, substitute coconut oil for butter. You can also add nuts or dried fruit if desired.
