Ingredients

  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 3/4 cup milk (or almond/soy milk)
  • 1 teaspoon vanilla extract
  • 1 cup chocolate peanut butter cups, chopped (or creamy peanut butter with chocolate chips)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a donut pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix the melted butter, eggs, milk, and vanilla until combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fill each donut cavity halfway with batter, add a chocolate peanut butter cup in the middle, and then cover with more batter until the molds are about ¾ full.
  6. Bake for 10-12 minutes or until the donuts spring back when lightly pressed.
  7. Let them cool for a few minutes, then gently remove them from the pan. Dust with powdered sugar or drizzle with melted chocolate if desired.

Notes

For a variation, use half milk chocolate and half dark chocolate for the filling. Store leftovers in an airtight container at room temperature for up to two days or freeze for up to three months.
