Ingredients

  • 1 lb ground beef (80/20 mix)
  • 1 lb ground pork
  • 2 cups fresh cranberries
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground beef and pork, mixing well until combined but not overworked. Gently fold in minced garlic and finely chopped onion.
  3. Add the fresh cranberries, brown sugar, soy sauce, and Dijon mustard. Don’t forget the chopped herbs! Mix until everything is evenly incorporated.
  4. Shape the mixture into meatballs, about 1-inch in diameter. Place them on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes, or until the meatballs are golden brown and cooked through.
  6. While they bake, prepare the glaze by simmering any leftover cranberries, brown sugar, and a splash of vinegar in a saucepan until thick and syrupy.
  7. Once baked, toss the meatballs in the glossy cranberry glaze just before serving.
