Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and ground cinnamon.
  3. In a separate bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually blend in the dry ingredients until combined.
  6. In another bowl, mix the cream cheese with a tablespoon of sugar and a sprinkle of cinnamon to create the cheesecake center.
  7. Using a large spoon, take a dollop of cookie dough and put a small spoonful of the cream cheese mixture in the center. Encase the cream cheese with the cookie dough and roll into a ball.
  8. Place them on the lined baking sheet with enough space between them.
  9. Bake for 10-12 minutes, until the edges are lightly golden brown.
  10. Allow cooling for a few minutes before transferring them to a wire rack.
