Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and ground cinnamon.
- In a separate bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- Gradually blend in the dry ingredients until combined.
- In another bowl, mix the cream cheese with a tablespoon of sugar and a sprinkle of cinnamon to create the cheesecake center.
- Using a large spoon, take a dollop of cookie dough and put a small spoonful of the cream cheese mixture in the center. Encase the cream cheese with the cookie dough and roll into a ball.
- Place them on the lined baking sheet with enough space between them.
- Bake for 10-12 minutes, until the edges are lightly golden brown.
- Allow cooling for a few minutes before transferring them to a wire rack.
