- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 8 oz cream cheese, softened
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 2 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper.
- In a large mixing bowl, beat together softened butter, granulated sugar, and brown sugar until creamy. Add eggs one at a time, mixing well after each addition, and then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and ground cinnamon. Gradually add the dry mixture to the wet mixture, stirring until just combined.
- In another bowl, blend softened cream cheese, sugar, and vanilla extract until smooth for the cheesecake filling.
- Take a tablespoon of cookie dough, flatten it, add a dollop of cheesecake filling in the center, wrap the dough around it, and roll into a ball.
- Place on the prepared baking sheet and bake for 12-15 minutes or until golden brown around the edges.
- Cool on the baking sheet for a few minutes before transferring to a wire rack. Whisk together confectioners’ sugar, a splash of milk, and vanilla extract for icing, then drizzle over cooled cookies.
Notes
Store leftovers in an airtight container at room temperature for up to 5 days. Cookies can be frozen for up to 3 months.
