Ingredients

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh cranberries
  • 1/2 cup orange juice
  • 2 tablespoons orange zest
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the orange juice, orange zest, and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients, folding gently until just mixed.
  5. Gently fold in the cranberries (and any nuts or chocolate chips, if using).
  6. Transfer the batter to your prepared loaf pan, smoothing the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow it to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. For extra flavor, drizzle an orange glaze made of powdered sugar and orange juice over the cooled bread.

Notes

For a vegan option, substitute eggs with applesauce or ground flaxseed mixed with water. Store leftover bread at room temperature for up to three days or freeze for up to three months.
