- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fresh cranberries
- 1/2 cup orange juice
- 2 tablespoons orange zest
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the orange juice, orange zest, and eggs until well combined.
- Pour the wet ingredients into the dry ingredients, folding gently until just mixed.
- Gently fold in the cranberries (and any nuts or chocolate chips, if using).
- Transfer the batter to your prepared loaf pan, smoothing the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow it to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- For extra flavor, drizzle an orange glaze made of powdered sugar and orange juice over the cooled bread.
Notes
For a vegan option, substitute eggs with applesauce or ground flaxseed mixed with water. Store leftover bread at room temperature for up to three days or freeze for up to three months.
