- 12 Medjool dates (or Deglet Noor dates)
- 8 oz cream cheese (full-fat or low-fat)
- 1 cup dried cranberries (unsweetened)
- 1 cup pecans (chopped and lightly roasted)
- 1–2 tbsp honey or maple syrup (optional)
- Pinch of cinnamon (optional)
- Splash of vanilla extract (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Slice each date down the middle and remove the pit.
- In a mixing bowl, combine cream cheese, chopped dried cranberries, and roasted pecans. Add honey or maple syrup if using, and mix until well combined.
- Fill each date generously with the cream cheese mixture.
- Place the stuffed dates on a baking sheet lined with parchment paper and bake for about 10-15 minutes until tops are golden and slightly bubbly.
- Allow to cool for a few minutes before serving warm or at room temperature.
Notes
For a gourmet touch, consider drizzling balsamic glaze over the dates before serving.
