Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 6 slices thick-cut bacon
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary
  • Salt and pepper to taste
  • Fresh herbs (parsley or chives) for garnish

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and chop it into bite-sized pieces, leaving the drippings behind.
  2. Add diced onion to the pot and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Toss in the chopped carrots and celery, seasoning with salt and pepper. Cook for an additional 5 minutes.
  4. Add the chicken pieces, stirring until they are coated with the mixture.
  5. Pour in the chicken broth and bring to a boil. Lower the heat and let it simmer for about 20 minutes or until the chicken is fully cooked.
  6. Remove the chicken, shred it, and return it to the pot along with the crispy bacon.
  7. Pour in the cream, mix gently, and simmer for an additional 5 minutes. Adjust seasoning as needed.
  8. Serve hot, garnished with fresh herbs.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For best texture, freeze without cream and add when reheating.
