- 1 lb boneless chicken (breast or thighs)
- 6 slices thick-cut bacon
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
- Salt and pepper to taste
- Fresh herbs (parsley or chives) for garnish
Instructions
- Cook the bacon in a large pot over medium heat until crispy. Remove and chop it into bite-sized pieces, leaving the drippings behind.
- Add diced onion to the pot and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
- Toss in the chopped carrots and celery, seasoning with salt and pepper. Cook for an additional 5 minutes.
- Add the chicken pieces, stirring until they are coated with the mixture.
- Pour in the chicken broth and bring to a boil. Lower the heat and let it simmer for about 20 minutes or until the chicken is fully cooked.
- Remove the chicken, shred it, and return it to the pot along with the crispy bacon.
- Pour in the cream, mix gently, and simmer for an additional 5 minutes. Adjust seasoning as needed.
- Serve hot, garnished with fresh herbs.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For best texture, freeze without cream and add when reheating.
