Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1 can (400ml) coconut milk
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 cup chicken or vegetable broth
  • 1 cup diced carrots
  • 1 cup diced bell peppers
  • 1 cup sliced mushrooms
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Fresh chili (to taste)
  • Salt and pepper (to taste)
  • Oil (for sautéing)

Instructions

  1. Heat oil in a large skillet over medium heat. Sauté minced garlic and grated ginger until fragrant, about 2 minutes.
  2. Add the chicken, season with salt and pepper, and cook until browned and cooked through, approximately 7-10 minutes.
  3. Toss in diced carrots, bell peppers, and mushrooms. Stir-fry for another 5 minutes until vegetables are tender.
  4. Pour in broth and coconut milk, bring to a gentle simmer for about 20 minutes.
  5. Stir in chopped cilantro and lime juice just before serving. Taste and adjust seasoning as needed.
  6. Ladle soup into bowls and garnish with extra cilantro or lime wedges.

Notes

For a vegetarian option, substitute chicken with tofu. This soup can also be frozen for up to 3 months.
