Description

A comforting dish of tender chicken in a creamy garlic sauce, perfectly complemented by mushrooms and fresh herbs.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, diced
  • 2 cups heavy cream
  • 4 cloves fresh garlic, minced
  • 8 oz Cremini mushrooms, sliced
  • 2 cups fresh spinach
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup chicken broth
  • Fresh basil and thyme
  • Salt and pepper to taste
  • Olive oil and butter for cooking

Instructions

  1. In a large skillet over medium heat, add olive oil and a tablespoon of butter. Once hot, sauté the diced chicken for 5-7 minutes until golden brown, season with salt and pepper, then set aside.
  2. Add mushrooms to the same skillet and sauté until soft and browned, about 5 minutes. Add minced garlic and sauté for another 1-2 minutes until fragrant.
  3. Pour in chicken broth and heavy cream, mix well, and reduce heat to low. Simmer and let thicken for about 5 minutes. Add Parmesan and stir until melted.
  4. Return the cooked chicken to the skillet, add spinach, and stir until spinach wilts and chicken is heated through.
  5. Adjust seasoning with salt and pepper. Add fresh herbs for a final touch. Serve with additional Parmesan and fresh basil.

Notes

This dish can be served over pasta or with crusty bread to soak up the sauce. For substitutions, use shrimp or tofu instead of chicken, and almond milk or coconut cream instead of heavy cream.
