Ingredients

  • 1 lb boneless, skinless chicken (breast or thighs)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 1 tsp fresh thyme, chopped
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat a large skillet over medium heat and add a drizzle of olive oil.
  2. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and brown on both sides until cooked through, around 7 to 10 minutes. Remove the chicken and set it aside.
  3. In the same skillet, add more oil if necessary. Sauté the onion until translucent, then add minced garlic, being careful not to burn it.
  4. Add sun-dried tomatoes and cook for 1-2 minutes before adding the spinach, letting it wilt.
  5. Pour in heavy cream and chicken broth, bringing it to a gentle simmer. Scrape the bottom of the pan to incorporate fond bits.
  6. Return the chicken to the skillet, sprinkling with Parmesan cheese. Simmer for a few more minutes until warmed through.
  7. Serve hot, garnished with extra Parmesan and a squeeze of fresh lemon.

Notes

Avoid overcrowding the pan when cooking the chicken to ensure even browning. Use fresh garlic for best flavor.
