- 1 lb boneless, skinless chicken (breast or thighs)
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 tsp fresh thyme, chopped
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat a large skillet over medium heat and add a drizzle of olive oil.
- Season the chicken pieces with salt and pepper. Add the chicken to the skillet and brown on both sides until cooked through, around 7 to 10 minutes. Remove the chicken and set it aside.
- In the same skillet, add more oil if necessary. Sauté the onion until translucent, then add minced garlic, being careful not to burn it.
- Add sun-dried tomatoes and cook for 1-2 minutes before adding the spinach, letting it wilt.
- Pour in heavy cream and chicken broth, bringing it to a gentle simmer. Scrape the bottom of the pan to incorporate fond bits.
- Return the chicken to the skillet, sprinkling with Parmesan cheese. Simmer for a few more minutes until warmed through.
- Serve hot, garnished with extra Parmesan and a squeeze of fresh lemon.
Notes
Avoid overcrowding the pan when cooking the chicken to ensure even browning. Use fresh garlic for best flavor.
