- 1 pound boneless chicken (breast or thighs)
- 1 cup heavy cream
- 4 cloves garlic, minced
- 8 ounces cremini or baby bella mushrooms, sliced
- 2 cups fresh spinach
- ½ cup Parmesan cheese, grated
- 1 cup chicken broth
- 2 tablespoons olive oil
Instructions
- Prepare the Ingredients: Slice the chicken into strips. Clean, slice, and set aside the mushrooms and garlic. Wash the spinach thoroughly.
- Heat the Skillet: In a large skillet over medium heat, add olive oil. Once shimmering, add the chicken, season with salt and pepper, and cook until golden-brown and cooked through. Transfer the chicken to a plate and cover.
- Sauté the Garlic and Mushrooms: In the same skillet, add more oil if needed and sauté the garlic until fragrant, about 30 seconds. Add the mushrooms and cook until browned and tender.
- Create the Creamy Sauce: Pour in the chicken broth, scraping the bottom of the skillet. Lower the heat, stir in the heavy cream, and let simmer. Mix in the Parmesan until melted and creamy.
- Add Spinach and Chicken: Return the chicken to the skillet along with the spinach and cook for another 2-3 minutes until the spinach wilts.
- Serve: Plate the dish and garnish with additional Parmesan and fresh herbs if desired.
Notes
For a lighter version, swap heavy cream for half-and-half or non-dairy alternatives. This dish can also accommodate turkey or shrimp.
