- 1 lb large shrimp (peeled and deveined)
- 1 cup orzo pasta
- 2 cups fresh broccoli florets
- 2 cloves garlic (minced)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 1/4 cup white wine (optional)
- Fresh herbs (parsley or basil) for garnish
- Salt and pepper to taste
Instructions
- In a large pot of boiling salted water, cook the orzo until al dente according to package instructions. Drain and set aside.
- In a large skillet, melt 1 tablespoon of butter over medium heat. Add the shrimp, season with salt and pepper, and cook for about 2-3 minutes until pink. Remove the shrimp and set aside.
- In the same skillet, add another tablespoon of butter. Add minced garlic and sauté until fragrant (about 30 seconds).
- Pour in the white wine and scrape any browned bits from the bottom of the skillet. Let it simmer for 1-2 minutes until reduced.
- Add the fresh broccoli, then pour in the heavy cream. Let it simmer gently for about 5 minutes, until the broccoli brightens and becomes tender.
- Stir the cooked orzo and sautéed shrimp back into the skillet, tossing everything well to coat in the creamy sauce.
- Remove from heat, stir in grated parmesan cheese and fresh herbs for garnish.
- Spoon into bowls, garnish with additional parmesan and herbs, then serve.
Notes
For a lighter option, you can use half-and-half instead of heavy cream. You can also substitute shrimp with sautéed chicken or mushrooms for variations.
