A comforting dish combining creamy orzo, succulent shrimp, and vibrant broccoli, perfect for family gatherings.


Ingredients

  • 1 lb large shrimp (peeled and deveined)
  • 1 cup orzo pasta
  • 2 cups fresh broccoli florets
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1/4 cup white wine (optional)
  • Fresh herbs (parsley or basil) for garnish
  • Salt and pepper to taste

Instructions

  1. In a large pot of boiling salted water, cook the orzo until al dente according to package instructions. Drain and set aside.
  2. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the shrimp, season with salt and pepper, and cook for about 2-3 minutes until pink. Remove the shrimp and set aside.
  3. In the same skillet, add another tablespoon of butter. Add minced garlic and sauté until fragrant (about 30 seconds).
  4. Pour in the white wine and scrape any browned bits from the bottom of the skillet. Let it simmer for 1-2 minutes until reduced.
  5. Add the fresh broccoli, then pour in the heavy cream. Let it simmer gently for about 5 minutes, until the broccoli brightens and becomes tender.
  6. Stir the cooked orzo and sautéed shrimp back into the skillet, tossing everything well to coat in the creamy sauce.
  7. Remove from heat, stir in grated parmesan cheese and fresh herbs for garnish.
  8. Spoon into bowls, garnish with additional parmesan and herbs, then serve.

Notes

For a lighter option, you can use half-and-half instead of heavy cream. You can also substitute shrimp with sautéed chicken or mushrooms for variations.
