Instructions
- Heat oil in a sturdy pot over medium heat and sauté minced garlic and ginger until fragrant, about 1 minute.
- Add the sliced chicken to the pot and sear for 5-7 minutes, until golden brown.
- Toss in the mushrooms and cook for an additional 3-4 minutes.
- Pour in the broth and coconut milk, stirring well. Bring to a gentle simmer for about 10 minutes.
- Add the ramen noodles and cook according to package instructions, typically 3-4 minutes.
- Stir in chili paste to adjust the spice level, and season with salt if needed.
- Ladle the ramen into bowls and garnish with chopped scallions, cilantro, and a squeeze of lime.
Notes
For a vegetarian variation, replace chicken with tofu and use vegetable broth. Don’t skip the garnishes as they elevate the dish.
