  • 4 cups chicken or vegetable broth (low sodium)
  • 2 tablespoons chili paste or sauce (sambal oelek or gochujang)
  • 2 cups bok choy, spinach, or kale
  • Fresh herbs (basil or cilantro) for garnish
  • Juice of 1 lime

Instructions

  1. Heat oil in a sturdy pot over medium heat and sauté minced garlic and ginger until fragrant, about 1 minute.
  2. Add the sliced chicken to the pot and sear for 5-7 minutes, until golden brown.
  3. Toss in the mushrooms and cook for an additional 3-4 minutes.
  4. Pour in the broth and coconut milk, stirring well. Bring to a gentle simmer for about 10 minutes.
  5. Add the ramen noodles and cook according to package instructions, typically 3-4 minutes.
  6. Stir in chili paste to adjust the spice level, and season with salt if needed.

Notes

For a vegetarian variation, replace chicken with tofu and use vegetable broth. Don’t skip the garnishes as they elevate the dish.
