- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 4 large eggs
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 cup heavy cream
- 1 cup chopped pecans
- 2 teaspoons vanilla extract
- 1/2 cup caramel sauce
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and sugars until light and fluffy (about 3-4 minutes).
- Add eggs one at a time, beating well after each addition, then mix in the vanilla extract.
- In another bowl, whisk together the flour and baking powder, then gradually add to the butter mixture until just combined.
- Gently fold in the chopped pecans.
- Pour the batter into a greased cake pan and level the top. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool for 10 minutes before transferring to a wire rack.
- In a saucepan, combine heavy cream and a few tablespoons of sugar over medium heat until sugar dissolves. Cool slightly, then mix in beaten egg yolks.
- Once the cake is completely cooled, pour the crème brûlée mixture over the top.
- Caramelize the topping under a broiler or with a kitchen torch until crispy. Watch carefully to avoid burning!
- Let cool before slicing. Serve as is or with whipped cream.
Notes
For a lighter option, substitute some butter with Greek yogurt. For nut substitutions, consider using walnuts or hazelnuts.
