- 6 fresh eggs
- 1 cup diced vegetables (bell peppers, onions, spinach)

- Salt to taste
- Fresh herbs (cilantro or chives) for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Gently press each tortilla into a muffin tin to form a cup.
- Sauté your chosen vegetables in a skillet over medium heat until tender.
- Whisk together the eggs, salt, and spices until well combined.
- Sprinkle a layer of cheese at the bottom of each tortilla cup, add sautéed vegetables, then the egg mixture, topping with more cheese.
- Bake for 15-20 minutes, or until the egg is set and the tortilla edges are golden.
- Garnish with fresh herbs before serving.
