- 4 boneless skinless turkey fillets
- 1 cup seasoned breadcrumbs
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme or parsley
- 2 tablespoons olive oil
- 2 cups fresh or frozen cranberries
- 1/2 cup orange juice
- 1 tablespoon brown sugar
Instructions
- Preheat the oven to 375°F (190°C). Pat the turkey fillets dry and season with salt and pepper.
- In a shallow dish, combine breadcrumbs, minced garlic, and herbs. Drench the turkey fillets in olive oil and coat them in the breadcrumb mixture.
- Heat a skillet over medium heat with a tablespoon of olive oil. Sear the turkey fillets for 3–4 minutes on each side until golden.
- Transfer the turkey to a baking dish and bake for 20 minutes, or until the internal temperature reaches 165°F (75°C).
- While the turkey bakes, combine cranberries, orange juice, and brown sugar in a saucepan. Cook over medium heat for about 10 minutes until the cranberries pop and break down.
- Once the turkey is done, plate the fillets and drizzle with cranberry sauce. Garnish with herbs if desired.
Notes
For variations, consider chicken breasts instead of turkey or try tofu for a plant-based option.
