- 1 cup cornmeal
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 tablespoon baking powder
- 2 large eggs
- 1 cup milk (whole or buttermilk)
- 1/4 cup butter (melted)
- 1 cup cheddar cheese (shredded)
- 1/2 cup onions (diced)
- 1/2 cup bell peppers (diced)
- Optional: jalapeños (sliced)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a skillet, melt a tablespoon of butter over medium heat, add onions and bell peppers, and sauté until softened, about 5 minutes.
- In a large mixing bowl, combine cornmeal, baking powder, and a pinch of salt.
- In another bowl, whisk together the eggs, milk, and melted butter, then pour into the dry ingredients, stirring until just combined.
- Fold in cheddar cheese, sautéed vegetables, and corn kernels; avoid overmixing.
- Pour the batter into the prepared dish and smooth it out, then bake for 30-35 minutes until golden brown and a toothpick comes out clean.
- Allow to cool for a few minutes before slicing and serving warm.
Notes
This dish can be made vegan by using flaxseed eggs and vegan butter. For a lighter version, consider using less cheese or butter.
