  • 2 large eggs
  • 1 cup milk (whole or buttermilk)
  • 1/4 cup butter (melted)
  • 1 cup cheddar cheese (shredded)
  • 1/2 cup onions (diced)
  • 1/2 cup bell peppers (diced)
  • Optional: jalapeños (sliced)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet, melt a tablespoon of butter over medium heat, add onions and bell peppers, and sauté until softened, about 5 minutes.
  3. In a large mixing bowl, combine cornmeal, baking powder, and a pinch of salt.
  4. In another bowl, whisk together the eggs, milk, and melted butter, then pour into the dry ingredients, stirring until just combined.
  5. Fold in cheddar cheese, sautéed vegetables, and corn kernels; avoid overmixing.
  6. Pour the batter into the prepared dish and smooth it out, then bake for 30-35 minutes until golden brown and a toothpick comes out clean.
  7. Allow to cool for a few minutes before slicing and serving warm.

Notes

This dish can be made vegan by using flaxseed eggs and vegan butter. For a lighter version, consider using less cheese or butter.
