Ingredients

- 1 can tuna, packed in water
- 1 can garbanzo beans, rinsed and drained
- 1 bell pepper, chopped (red, yellow, or green)
- 1/2 red onion, chopped
- Fresh herbs (parsley or cilantro), chopped
- 3 tablespoons olive oil
- Juice of 1 lemon
- 1 clove garlic, minced (or garlic powder)
- Salt and pepper to taste
Instructions
- Prep your ingredients by rinsing the garbanzo beans and draining the tuna. Chop the bell pepper, red onion, and any fresh herbs.
- In a large bowl, combine the garbanzo beans and tuna. Toss in the chopped veggies, herbs, olive oil, and lemon juice, adding garlic for flavor.
- Gently fold everything together to combine without mashing. Adjust seasonings as needed and add more lemon juice if desired.
- If time permits, chill the salad in the refrigerator for about 30 minutes for the flavors to meld.
- Serve the salad in a bowl, garnishing with extra herbs or feta cheese as desired.
Notes
Feel free to customize by substituting tuna with chickpeas for a vegetarian version or adding olives for extra flavor.
