Description

A rich and moist chocolate cake enhanced with roasted pistachios, creating a perfect balance of flavors and textures.


Ingredients

  • 200g High-Quality Dark Chocolate (70% cocoa)
  • 100g Unsalted Butter
  • 200g Granulated Sugar
  • 3 large Eggs
  • 150g All-Purpose Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 150ml Whole Milk
  • 1 tsp Pure Vanilla Extract
  • 100g Chopped Pistachios
  • 200ml Heavy Cream (for ganache)
  • Extra chopped pistachios for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two round cake pans.
  2. Melt dark chocolate and butter in a double boiler or microwave until smooth.
  3. Whisk together flour, baking powder, and salt in a bowl.
  4. In another bowl, beat sugar and eggs until fluffy.
  5. Combine melted chocolate mixture with the egg-sugar blend.
  6. Fold in the dry ingredients until just combined.
  7. Add milk and vanilla extract. Optionally, add a tablespoon of brewed coffee.
  8. Fold in half of the chopped pistachios.
  9. Divide batter between prepared pans and bake for 25-30 minutes.
  10. Cool the cakes in the pans for 10 minutes, then onto a wire rack until cooled completely.
  11. For ganache, heat heavy cream until bubbling, pour over chopped chocolate, let sit, then stir until smooth.
  12. Assemble the cake by layering ganache between cooled cake layers, pouring remaining ganache on top and garnishing with the reserved pistachios.
  13. Let sit before serving, optionally with whipped cream or berries.

Notes

For variations, consider using semi-sweet chocolate or coconut oil for dairy-free options.
