- 200g High-Quality Dark Chocolate (70% cocoa)
- 100g Unsalted Butter
- 200g Granulated Sugar
- 3 large Eggs
- 150g All-Purpose Flour
- 1 tsp Baking Powder
- 1/4 tsp Salt
- 150ml Whole Milk
- 1 tsp Pure Vanilla Extract
- 100g Chopped Pistachios
- 200ml Heavy Cream (for ganache)
- Extra chopped pistachios for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two round cake pans.
- Melt dark chocolate and butter in a double boiler or microwave until smooth.
- Whisk together flour, baking powder, and salt in a bowl.
- In another bowl, beat sugar and eggs until fluffy.
- Combine melted chocolate mixture with the egg-sugar blend.
- Fold in the dry ingredients until just combined.
- Add milk and vanilla extract. Optionally, add a tablespoon of brewed coffee.
- Fold in half of the chopped pistachios.
- Divide batter between prepared pans and bake for 25-30 minutes.
- Cool the cakes in the pans for 10 minutes, then onto a wire rack until cooled completely.
- For ganache, heat heavy cream until bubbling, pour over chopped chocolate, let sit, then stir until smooth.
- Assemble the cake by layering ganache between cooled cake layers, pouring remaining ganache on top and garnishing with the reserved pistachios.
- Let sit before serving, optionally with whipped cream or berries.
Notes
For variations, consider using semi-sweet chocolate or coconut oil for dairy-free options.
