Instructions

  1. Brew a strong pot of espresso or coffee and let it cool. Pour it into a shallow dish for soaking the ladyfingers.
  2. In a blender, combine ripe mangoes and passionfruit puree until smooth. Sweeten lightly with sugar if needed.
  3. In a separate bowl, beat the heavy cream until stiff peaks form. Fold in mascarpone cheese and a bit of sugar until smooth.
  4. Carefully fold the mango-passionfruit mixture into the mascarpone whip until just combined.
  5. Dip ladyfingers into the coffee mixture quickly, then layer them in your serving dish. Spread a layer of the mango-passionfruit mascarpone over the ladyfingers. Repeat until all ingredients are used, finishing with a creamy layer.
  6. Cover the dessert with plastic wrap and refrigerate for at least 4-6 hours or overnight.
