Ingredients
- Ladyfingers
- Mascarpone cheese
- Espresso or strong coffee
- Ripe mangoes
- Passionfruit puree
- Heavy cream
- Sugar
Instructions
- Brew a strong pot of espresso or coffee and let it cool. Pour it into a shallow dish for soaking the ladyfingers.
- In a blender, combine ripe mangoes and passionfruit puree until smooth. Sweeten lightly with sugar if needed.
- In a separate bowl, beat the heavy cream until stiff peaks form. Fold in mascarpone cheese and a bit of sugar until smooth.
- Carefully fold the mango-passionfruit mixture into the mascarpone whip until just combined.
- Dip ladyfingers into the coffee mixture quickly, then layer them in your serving dish. Spread a layer of the mango-passionfruit mascarpone over the ladyfingers. Repeat until all ingredients are used, finishing with a creamy layer.
- Cover the dessert with plastic wrap and refrigerate for at least 4-6 hours or overnight.
- Before serving, dust the top with cocoa powder or grated chocolate and garnish with fresh mango or passionfruit slices.
Notes
Chill all ingredients for a lighter texture. Only soak ladyfingers briefly to avoid mushiness.
