Instructions
- Preheat your oven to 350°F (175°C). Line your muffin tin with liners and set aside.
- In a bowl, mix the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, and nutmeg.
- In another bowl, whisk together the eggs, milk, and melted butter until frothy.
- Slowly combine the wet and dry ingredients, folding in the diced apples gently to keep them intact.
- Fill the muffin cups to about three-quarters full and sprinkle a bit of brown sugar or a crumb topping if desired.
- Bake for about 20-25 minutes, or until a toothpick inserted comes out clean.
