Description
Spicy and cheesy muffins that combine classic mac and cheese with a fun twist from Flamin’ Hot Cheetos.
Ingredients

- 2 cups elbow macaroni
- 1 cup sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 2 cups Flamin’ Hot Cheetos, crushed
- 1 cup whole milk
- 1/2 cup heavy cream
- 1/4 cup butter
- 2 large eggs
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon garlic powder
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with non-stick spray or paper liners.
- Boil water in a large pot, add a pinch of salt, and cook the macaroni until al dente. Drain and set aside.
- In a saucepan, melt butter over medium heat, stir in flour to create a roux, then gradually whisk in milk and cream until thick. Remove from heat and add cheese until melted.
- In a large bowl, mix the cooked pasta, cheese sauce, and 1 cup of crushed Cheetos. Add eggs and stir until combined.
- Spoon the mixture into the muffin tins, filling each cup to the top and topping with extra crushed Cheetos.
- Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
- Let cool slightly before removing from the tin. Serve warm or at room temperature.
Notes
Serve with a light salad or pickled vegetables to balance richness. Muffins can be stored in the fridge for 3-4 days or frozen for up to 3 months.
