Description

Spicy and cheesy muffins that combine classic mac and cheese with a fun twist from Flamin’ Hot Cheetos.


Ingredients

  • 2 cups elbow macaroni
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 2 cups Flamin’ Hot Cheetos, crushed
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 2 large eggs
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with non-stick spray or paper liners.
  2. Boil water in a large pot, add a pinch of salt, and cook the macaroni until al dente. Drain and set aside.
  3. In a saucepan, melt butter over medium heat, stir in flour to create a roux, then gradually whisk in milk and cream until thick. Remove from heat and add cheese until melted.
  4. In a large bowl, mix the cooked pasta, cheese sauce, and 1 cup of crushed Cheetos. Add eggs and stir until combined.
  5. Spoon the mixture into the muffin tins, filling each cup to the top and topping with extra crushed Cheetos.
  6. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Let cool slightly before removing from the tin. Serve warm or at room temperature.

Notes

Serve with a light salad or pickled vegetables to balance richness. Muffins can be stored in the fridge for 3-4 days or frozen for up to 3 months.
