Instructions

  1. Activate the yeast by combining warm milk, 1 tbsp of sugar, and yeast in a small bowl. Let sit for 5-10 minutes until frothy.
  2. Mix the dough: In a large bowl, combine flour, remaining sugar, spices, and salt. Make a well, add pumpkin puree, melted butter, and eggs. Pour yeast mixture into the well and stir until combined. Knead for 8-10 minutes.
  3. First rise: Place dough in a greased bowl, cover, and let rise for 1-1.5 hours until doubled.
  4. Prepare the filling: Mix brown sugar, cinnamon, and softened butter in a small bowl.
  5. Shape the rolls: Punch down dough and roll out to a ½ inch thick rectangle. Spread butter-sugar mixture evenly over the dough.
  6. Roll and cut: Roll tightly into a log and cut into 12 pieces. Place into greased baking dish.
  7. Second rise: Cover and let rise for 30-45 minutes until puffy.
  8. Bake: Preheat oven to 375°F and bake for 20-25 minutes until golden brown.
  9. Make frosting: Whip together cream cheese, powdered sugar, and vanilla. Adjust consistency with milk.
  10. Frost and serve: Let rolls cool for 10 minutes, then frost generously before serving.
