- 2 tablespoons baking powder
- 1/4 cup granulated sugar (adjust to taste)

- 1 large egg
- 1 cup milk (whole or buttermilk)
- 1/2 cup unsalted butter, melted
- 1/2 cup rainbow sprinkles
Instructions
- Preheat the oven to 400°F (200°C) and grease a muffin tin or line with muffin liners.
- In a large mixing bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt.
- In a separate bowl, whisk together the melted butter, milk, and egg until fully combined.
- Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
- Fold in the rainbow sprinkles gently.
- Fill the muffin tin about three-quarters full with the batter and bake for 15–18 minutes.
- Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.
- Serve warm and enjoy!
Notes
For a dairy-free version, use almond milk or oat milk. For an egg substitute, replace one egg with 1/4 cup unsweetened applesauce or a flax egg.
