Instructions

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line with cupcake liners.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk the milk, melted butter, and eggs until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the rainbow sprinkles carefully.
  6. Spoon the muffin batter into the prepared tin, filling each cup about two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
