- 1/2 cup rainbow sprinkles
Instructions
- Preheat the oven to 375°F (190°C). Grease a muffin tin or line with cupcake liners.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the milk, melted butter, and eggs until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fold in the rainbow sprinkles carefully.
- Spoon the muffin batter into the prepared tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let muffins cool in the tin for 5 minutes before transferring to a wire rack.
Notes
For gluten-free, substitute all-purpose flour with a gluten-free blend or almond flour. Avoid overmixing for fluffy muffins.
