- 4 tablespoons unsalted butter

- 1 cup mixed vegetables (like bell peppers, onions, or spinach)
- 1/2 cup Parmesan cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium saucepan, bring the broth to a boil. Add the rice and a pinch of salt, stir, cover, and reduce to a simmer. Cook according to package instructions (15-20 minutes for white rice).
- In a large skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant (about 1 minute). Toss in the shrimp and cook until they start to turn pink (about 2-3 minutes). Add vegetables and sauté until slightly tender.
- In a large mixing bowl, combine cooked rice, sautéed shrimp, and the butter-garlic mixture. Stir in fresh herbs and cheese if using.
- Transfer the mixture to a greased baking dish. Top with additional cheese if desired and bake for 20-25 minutes, or until bubbly and golden.
- Let cool for a few minutes before serving. Garnish with additional herbs and serve warm.
