Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, bring the broth to a boil. Add the rice and a pinch of salt, stir, cover, and reduce to a simmer. Cook according to package instructions (15-20 minutes for white rice).
  3. In a large skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant (about 1 minute). Toss in the shrimp and cook until they start to turn pink (about 2-3 minutes). Add vegetables and sauté until slightly tender.
