- 4 boneless chicken breasts or thighs
- 1 cup Greek yogurt
- Juice of 1 lemon
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh or dried herbs (oregano, thyme, rosemary)
- Salt and pepper to taste
Instructions
- Clean and pat dry the chicken.
- In a bowl, combine Greek yogurt, lemon juice, minced garlic, olive oil, and herbs; whisk until smooth.
- Season the marinade with salt and pepper.
- Coat the chicken in the marinade and let it marinate in the refrigerator for at least 1 hour, preferably overnight.
- Preheat your grill or skillet over medium-high heat.
- Grill the chicken for 6-7 minutes per side, or until it reaches an internal temperature of 165°F.
- Let the chicken rest for a few minutes before serving.
Notes
For extra flavor, baste the chicken with the leftover marinade during grilling. A meat thermometer is recommended to ensure perfect cooking without overcooking.
