- 2 pounds boneless skinless chicken thighs or breasts
- 1 cup Greek yogurt
- 3 cloves minced garlic
- Juice of 1 lemon
- 2 tablespoons olive oil
- 1 tablespoon dried oregano
- Salt and black pepper to taste
Instructions
- In a mixing bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, oregano, salt, and black pepper. Whisk until blended.
- Add the chicken to the marinade, ensuring it is thoroughly coated. Cover and refrigerate for at least 2 hours or overnight.
- Preheat your grill or oven to 350°F.
- Remove the chicken from the marinade, letting excess drip off. Grill for 6-7 minutes on each side until internal temperature reaches 165°F, or roast on a lined baking sheet for about 25-30 minutes.
- Let the chicken rest for 5 minutes before slicing.
- Serve with a salad or grilled vegetables, adding tzatziki or feta cheese if desired.
Notes
For a similar tenderizing effect, you can substitute Greek yogurt with buttermilk. Don’t skip marination time for the best results.
