- 1 cup Greek yogurt
- 3 cloves fresh garlic, minced
- Zest and juice of 1 lemon
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped

- Salt, to taste
- Pepper, to taste
- 2 pounds boneless, skinless chicken thighs or breasts
Instructions
- Prepare the Marinade: In a bowl, combine Greek yogurt, lemon zest and juice, minced garlic, olive oil, chopped fresh herbs, salt, and pepper. Whisk until smooth.
- Marinate the Chicken: Place chicken in a resealable plastic bag or shallow dish and pour the marinade over the top. Ensure all pieces are coated, seal the bag or cover the dish, and refrigerate for at least 2 hours or overnight.
- Heat Your Skillet: When ready to cook, heat a skillet over medium-high heat with a drizzle of olive oil.
- Cook the Chicken: Remove the chicken from the marinade, shaking off excess. Place in the hot skillet, making sure not to overcrowd.
- Sear and Finish: Cook for 6-8 minutes on each side until golden brown and internal temperature reaches 165°F.
- Rest and Serve: Allow chicken to rest for 5 minutes before slicing to ensure juiciness.
Notes
For best results, marinate overnight. Can also be cooked on the grill for added flavor.
